What makes a good meal? Is it the finesse of the chef? The ingredients that make up the feast? Or is it something else altogether, something that transcends the meaning of a meal, takes it out of the material world of sustenance and elevates it into the social realm - so it becomes an experience? Yesterday, I was lucky to participate in one such great meal, brought together by @rethinking_refugees and @kuchniakonfliktu . Five people: Zadran from Chechnya, Sara from Lebanon, Sultan from Afghanistan and Sasha from Krasnodar, together with Mateusz, a Head Chef of @kuchniakonfliktu in Warsaw, were a reason a little crowd gathered at @hevrekazimierz to cook together, share stories and learn from each other. Eating is one of the universal things that all people share. And food can be an incredible (and democratic) medium of communication, that allows for creating spaces where people can come together without prejudice - to simply share a meal. We all eat, and we all like to eat well. Why not, then, expand our culinary horizons by opening ourselves to something new? Not only do we have a chance of tasting things perhaps hitherto unknown to us, but also to open ourselves up for another person and listen. It’s said that Krakow’s life has always been defined by its cafes: it is where important issues are discussed, new projects are born and ideas developed. I, too, spent countess hours in Krakow’s ‘kawiarnie’, reading, drinking a sea of black coffee, thinking, people watching or indulging in cakes. Bunkier Cafe has been one of my favourite cafes since high school. Here’s something my Mum does really, really well: bigos. Bigos is a hearty stew made of cabbage (often fresh mixed with sauerkraut), meat and wild mushrooms. The origins of the dish are disputable, but it’s noted that bigos was common in 18th century Poland. Ever tried? If made well - slow-cooked for a few days, over open fire if possible - it’s heaven. Lab-36 from Pracownia Piwa, Poland 🇵🇱. The funny thing about Sundays here is that I always wish that the shops were open, but every time Niedziela Handlowa (the one Sunday each month where shops are allowed to open) actually comes around, all I can think is that there is no way that I want to go anywhere! Today was also pretty cold with a semi-permanent fog - better to just warm up with another one of my winter specials: An Imperial Milk Stout at 10.2%. Aged in barrels previously used for Merlot definitely gives it that tart, grape flavour and feel, just without that weird, dry mouth sensation I get with red wine. It feels like the best combination of a stout and a wine but somehow taking only the best bits. Smooth and silky feel with almost no carbonation. Malt flavour with awesome oak notes and just ever-so-slightly sweet. Very easy to drink and kind of a shame that I don't have a suitable vessel from which to do so 😫. Candy Shop Nut Cake from Browar Deer Bear, Poland 🇵🇱. I was cold today. Not that it was particularly colder than before but I could feel it on my arms under my coat, therefore I'm calling Winter... Which means it's time for the winter collection of beers to be taken out of the cool, dark cupboard and given the opportunity to put that warm, fuzzy feeling into the lucky one who gets to drink them (well, me). An Imperial Stout at 10%. Already a few sips in and completely forgot about the strength, which means it's quite easy drinking! Moderate hazelnut/chocolate flavour with some caramel sweetness and hints of coconut. Fairly substantial body to it without unnecessary fizz. Sleeping Car Porter from Inne Beczki, Poland 🇵🇱. The gift of beer is always gonna go down well with me, but the trouble can come with my indecisiveness as to which one to begin with if there's more than one 😅. Luckily (and yeah I really mean it!), only a few weeks earlier I'd received this one for another occasion, so that made it easy! A Porter at 6%. Intense bitter, but creamy coffee flavour with a dark chocolate hint. Some faint cherry like notes. I have to be honest in saying that my expectations were pretty low after seeing the name of this beer (but then again maybe that was their plan?), but I was quite excited to see it came in a half litre bottle! A Pale Ale at 5.1%. Fruity, a little bit sour and some zingy citrus notes. Dry, bitter finish. Black IPA from Pulfer, Croatia 🇭🇷. On our day trip to Zagreb last year, a friend recommended one bar to head to if I was interested in beers (which indeed I am!). I tried a few beers before asking for a pint of the Porter they had, but once I sat down and started to drink it, it seemed very unlike any other Porter I'd tried 😂. So when I finished it, I asked for a taster of this beer, and it turned out that this was what I was given! Luckily it was a great beer so I had no need to return it, and I even managed to find a bottle of it the next day 😮 so here goes my second taste. A Black IPA at 6.9%! Roasted malt flavour but not too strong, Pine and citrus give it a fruity zing. Daintree from Fourpure Brewing Company v Tiny Rebel, England 🏴󠁧󠁢󠁥󠁮󠁧󠁿. Like I said, it's a short holiday (leaving tomorrow 😫) so although there was just about enough time to meet with friends and family, finding the moment to sit with a beer and savour it was not so easy - so that's why I'm drinking this not much longer after the other on this fine Sunday afternoon. Also another gift I can't take with me! A Mango Smoothie IPA at 6%. Looks very much like mango juice, bit more consistency than your average IPA (but luckily not so much like mango juice 😂). Definitely a strong and sweet mango flavour but without overstepping the mark. Finish is bittersweet with a hint of passion fruit.
