Strawberry season is almost over. How sad! Before strawberries disappear completely this year, here’s a recipe for an old-time classic, a dish that many kids in Poland know all too well – and either love or hate. A steaming bowl of rice topped with fresh strawberries and a dollop of whipped cream is something that many would probably thought of as inedible – but I dare you to try!
Sweet lunches are not as unusual as one would think, at least here, in Poland. Pierogi with bilberries or apples, topped with sugar, cinnamon and cream – yes, please! Sweet cottage cheese dumplings with melted butter and a sprinkle of sugar – show me a kid who hates them.
Rice with strawberries and cream works, too. Bizarrely, but still. Fresh strawberries are, of course, the best, but frozen work just fine, too! I added a bit of a homemade elderflower cordial to mine – for an extra flavour of summer. Hungry yet?

Rice with Strawberries and Cream
INGREDIENTS
150g white short-grain rice
100ml double cream
2-3tbsp sugar
300g fresh strawberries
elderflower cordial (optional)
HOW TO MAKE?
1. Cook the rice – we want it on a sticky side.
2. Wash the strawberries and cut them in halves or quarters. Blend or crush half of the strawberries.
3. Whip the double cream, you can add a bit of icing sugar if you like.
4. To serve, add some rice onto a plate, top with blended strawberries and strawberry pieces, sprinkle with sugar (or elderflower cordial) and add a dollop of whipped cream. All done!
